Something like this you mean Andy........

The BK Sovereign is now over 15yrs old, and still going strong. I have replaced all 4 cast iron griddles, but the construction and rotisserie etc are all still in great shape. It dosent get that much use now. Unless I’m just throwing a few burgers and sausages on(which ain’t often) as it gets up to heat nice and quick.

The Keg is now 10yrs old and is starting to show its age. But this is great for when I wrap the brisket/pork butt/ribs etc.
I’ll get the temp to 240 with a water bath and put them in there once they’ve finished taking smoke :wink:

A tool for every type of meat.
I used our Gas for some Pork chops at the weekend, reminded me how needy they are. Fat fires on the briquettes as soon as you close the lid🤬.
Reminded me why I end up Drinking a bottle of red whilst cooking for an evening soirée :drunk:

T’d some thighs yesterday. Not the best juicy and crispy but no match for drums and wings.
Will try some boneless thighs wrapped in bacon that might up their game.
Next will be shoulder of lamb for a curry.
With this weather got plans to build a shelter so I can carry on regardless.

Well dry day today.
Yesterday picked up a £10 lamb shoulder from supermarket.
Recipes are a bit hit and miss for lamb, I know it rendered excessively when I have previously cooked in slow cooker.

So I coated in yellow mustard salt and pepper then coated in curry powder. Put in fridge over night.
In it went at 225F 3 hours it hit 150 and stalled.
Wrapped in Butchers and cranked to 280F hour later still stuck. Upto 300F of it went. Got it to 185F 4 hours later
Rested in towel for 1/2 hour before dicing and mixing with curry sauce.

Used Apple pellet and to be honest the meat was so good, it would have been better served with new potatoes & green beans :laughs: where as the slow cooker curry worked very well but that was cooked in the sauce. 🤔

All ready for the locusts family tomorrow….. :laughs:

The pork butts have been brining in cider for 48hrs, take them out and cover in rub. They’ll start in the treg at 220f for 4-5 hrs.

Once up to temp wrap them in heavy foil and stick in the Keg for a further 4-5hrs at 220f.

Once they’re in the keg the belly pork burnt ends “nibbles”will go into the treg at 220f for a couple of hours to get smoke.
They’ll then get transferred into a heavy pan and coated in a nice sticky bbq sauce and will finish in the keg.

While everyone’s pigging out enjoying those, the chick thighs and drumsticks will starting in the treg at 180f for snd hour.
Then it’ll be wack the heat up for a further hour with a sticky sauce to glaze.

While the chick is finishing the foot long sausages and 6oz butchers burgers will be getting done on the BK Sov…. :wink:

All accompanied by home made slaw, guacamole and spud salad.
Oooooh and one or 6 bottles of 19 crimes and Estrella to lubricate all the moving parts :laughs:

He’s done his ACL and MCL proper style. He needs surgery on both.

He thinks he hadn’t completely torn them then, but finished the job properly the next game. :roll:

Chicken really tastes great on the T
Bacon wrapped drumstick’s and sticky wings with chip shop chips.
Followed by cheesecake. 🤣

Is a cheap smoker worth a punt at £28? I know nothing about smokers, would it cook typical BBQ stuff like burgers,sausage, skewers etc?
How long would they take you reckon?
Only 3 of us in the house so wouldnt need to be able to cook a load of stuff.

I’ll be honest Chris, anything only costing £20 odd quid any gonna be a whole lot of good.

The key to smoking is keeping the temps constant. And I very much doubt you’ll be able to do that with something like that.

If you really want to dip your toes into smoking you can get a decent Webber Smokey Joe for less than a ton.
Or spend a little extra and get a Smokey mountain. Ideal starter set ups.
